With L'Ensemble, we are pushing the limit. Not only the limit of the maximum achievable, because 13% vol is extremely heavy for a full malt beer. The boundary between beer and wine is also blurred, because to reach this alcohol percentage, part of the fermentation is done using wine yeast. Brewing and fermenting this unique beer takes a lot of time and attention. But it is worth the wait, warming and full of flavor.
