Bien Sur with Cranberries
In the preparation of our barley-wine L'ensemble, so much residual sugar remains in the grains that over 3000 ltr. of other beer of 7%vol can be brewed from it. This "afterflow" is collected in a separate tank and acidified for 18 hours before being brewed in the normal way. A generous dose of cranberries is added during fermentation. After fermentation an addition of macerate of gin spices, and then further aging in wooden barrels (preferably gin barrels) for at least 1 year. Thus the somewhat complex process of preparing our gin sourale.

A full malt beer with refermentation in the bottle. This dark Sour Ale is slightly sour, and bitter in flavor and has aged in a variation of different wooden barrels. The Cranberries give the beer a refreshing fruity character.
