Sour ale with cranberries
Bien Sur Cranberry
In the preparation of our barley-wine, so much residual sugar remains in the grains that over 3,000 liters of other beer of 7 vol% can be brewed from it. This "afterflow" is collected in a large tank and acidified for 18 hours, then brewed in the normal way. During fermentation, a generous dose of cranberries is added. After fermentation, an addition of a macerate of gin spices, to then continue aging in wooden gin barrels for at least 1 year.
"Our gems in beer."
