The original IPA once came from England and has been revived by American brewers, albeit with their typical, fruit-forward American hops. But the original English IPA, was also a barrel-aged beer, only because they had no other way to transport the beer, other than in wooden barrels. So the logical idea arose to try the same with an American IPA. The long aging in wooden barrels, in conjunction with the microflora present in the wood, thus created the Fleur Sauvage, a wild ale. Basically our Belle Fleur, often aged for more than two years resulting in a very smooth saison-like beer with a floral and slightly sour finish. Aged to perfection.

Brew sheet
A superior, wood-aged, full malt beer with bottle refermentation. The beer matures for an average of 24 months in wooden barrels. The partial wild fermentation, combined with the wood of the barrels and the bitterness of the hops, creates a funky smooth and sour wild ale.
