The special beers in our range are our "pearls" in the assortment. Mostly aged in wooden barrels in our cellar, the heart of the brewery. Time does its work here and complex beers are created, that will charm to the most spoiled beer drinkers. Gastronomically, the beers can be combined well with culinary delights, as well as Burgundian dining!

Bien sur met Cranberries

Our first 'fruitbeer'!  Based on our barrel-aged beer "Bien-Sûr' , a gin-sour ale. Slightly sour, dark beer with a delicate gin flavour. By adding a large quantity of cranberries this beer got the 'boost'that it needed to become a super fresh, sour, fruitbeer. And that worked out well!

Bravoure Oak and smoke

This beer gets the smoked flavour by the use of a ferm portion of Bembergian smoked malt. The result is a balanced smoked beer with a subtle caramel flavour. This specific version has been barrel aged on red wine barrels and new oak barrels, with a little bit of rosemary.

Absolutely the best beer to combine with a BBQ. Delicious with roasted meat and stews.

'Porto' gemaakt van bier!

Innovative and surprising. After a visit to a Porthous in Porto the idea rose to use the same method to produce a 'Porto' out of beer. A specially brewed barleywine is , after a few days of fermentation, put to strength by adding grainalcohol. The fermentation is put to hold with lots of remaining sugars. The sweet 'reinforced' barleywine is the aged for multiple years on oak barrels and, in the proces 'portorized'. For now available in 3 year- , 4 year- and (December 2020) 5 year version.

Our first beer of the ‘Pure Oak Series’:

These are / will be beers matured on new Bulgarian oak barrels. This type of wood has characteristics of both American oak and French oak; beautiful vanilla keys paired with spicy oak keys. Through maturing these beers for six months in these casks, they get incredibly beautiful wood / vanilla flavors.
The practice will learn us which beers will eventually come in the ‘pure oak series’; We already know that above all blond beers come into their own with this kind of barrel aging.

Style: Classic heavy bittersweet ‘Imperial Stout’ with a touch of ‘Rooibos’, 11% vol. / serving at 11 ℃

L'Ensemble Pure Oak series

Bien-Sûr

Bij het brouwen van L’Ensemble blijft er nog zoveel extract over dat we er een extra bier van kunnen maken: een Gin-Sour ale. De opgevangen wort wordt met melkzuurbacteriën verzuurd. Daarna wordt het bier gebrouwen en vergist. Een rijping op houten (jenever)-vaten zorgt voor de nodige balans.

Fleur Sauvage

Our IPA Belle Fleur is aged for almost 2 years on second use white Burgundy barrels. In the seconds  half of maturation in the presence op Brettanomyces.  Wild, complex and beautiful.

Style: Light blonde / intensly hopped beer with dry-hopping / barrel-aged / 6% vol / serving at 5 ℃

La Renaissance Gold / Silver

Original English IPA with prolonged aging in white Burgundy barrels (Puligny-Montrachet), 7 vol%

La Renaissance is a revival of an old hit. In the years around 1800 the “India Pale Ale” was highly sought after in the UK. La Renaissance is made from malt and hops, which were most used in that time, and then matured for a year in wooden barrels. Through its long maturation, the beer is softer and less bitter. In addition, the beer takes tannins and flavors from the wood. Our own ‘twist’ to this story is the choice of the used barrels. We have chosen burgundy barrels of the brand, “Puligny Montrachet.’ This white Burgundy with its dry, earthy spiciness, complements the beer excellent. The slight acidity of the wine harmonizes wonderfully well with the bitterness of the beer. A few days before bottling, La Renaissance’ is dry-hopped with the popular hop variety “Nelson Sauvin.” This gives the beer a little more ‘Sauvignon Blanc’ character and a crispy, fresh hop flavor. La Renaissance is a wonderful and complex beer, that, with its multitude of flavors, will delight the most spoiled beer lover. ‘La Renaissance’ doesn’t have to be paired with food, but is a treat on itself. Taste the beer together with the wine: you will be surprised by the similarities.

L 'ensemble

Een volmout gerstewijn van 13% vol, die één maal per jaar wordt gebrouwen; vergist met bier- en wijngist

Met L’Ensemble zoeken we de grens op. Niet alleen de grens van het maximaal haalbare, want 13% vol is extreem zwaar voor een volmoutbier. Ook de grens tussen bier en wijn vervaagt, om namelijk aan dit alcoholpercentage te komen, geschiedt een deel van de vergisting m.b.v. wijngist. Het brouwen en vergisten van dit unieke bier vergt veel tijd en aandacht. Lees verder in het technische fiche.

Stijl: Barley wine (winterbier)

L'Ensemble di Montalcino

A full malt barley wine of 13% by volume, which is brewed once a year; fermented       with beer and wine yeast. With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between, beer and wine,  because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention.

Aged for 1 year on Brunello barrels (red wine).

Style: Barrel-aged Barley wine (winter beer) / serving at 12 ℃

La renaissance GRAND CRU II

La renaissance GRAND CRU ons Koningsnummer

Oorspronkelijke Engelse IPA met langdurige rijping op witte puligny Montrachet vaten (7% vol).
Door deze extra lange rijping van 2,5 jaar, wordt het bier zachter en minder bitter. Bovendien neemt het bier tannines en smaken uit het hout op. Onze eigen ‘twist’aan dit verhaal is de keus van de gebruikte vaten. Wij hebben deze keer gekozen voor Meursault-vaten.’ De lichte zurigheid van de wijn harmonieert wonderbaarlijk goed met de bitterheid van het bier. Enkele dagen voor het bottelen wordt ‘La Renaissance’ gedry-hopped met de hopsoort ‘East Kent Golding’ en een vleugje ‘Nelson Sauvin.’ Het resulterende bier weerspiegelt het romige vineuze karakter van de ‘Meursaultwijn’, tesamen met de bittere kruidigheid van de hop. Een groots bier met klasse.

Peated / blended Oak Aged Embrasse

op Whiskey vaten gerijpt

Embrasse matures four to six months in whiskey barrels. For the peated oak aged Embrasse Islay barrels are used; for the blended oak aged Embrasse non-peated whiskey barrels are used.
By barrel aging the beer it takes the rich tones of the whiskey and the beer gets a softer and fuller taste.
Both types do well with blue cheeses and nuts; but both beers are also excellent with venison. Peated Oak Aged Embrasse won the 2011 Zythos Consumer Trophy.

Style: Abbey / Stout / Porter Barrel-aged /  serving at 10 ℃

Noblesse VSOP

Accessible spicy blonde beer of only 5.5 vol% matured in gin barrels.

This beer has matured for eight months on  ‘Villiers’ genever barrels and 8 months in bottle. Noblesse VSOP is thus a clear beer, and has a very fine, light bitterness of hops and juniper. The beer is refreshing, smooth and has sufficiently long aftertaste. A perfect thirst-quenching beer.

Tasty with asparagus / dutch herring.

Style: Kölsch / Bitter / Blonde Barrel-Aged /  serving at 7 ℃

Peated Oak Aged Embrasse

op Whiskey vaten gerijpt

Embrasse lagert 4 tot 6 maanden op whiskey-vaten. Voor de Peated Oak Aged Embrasse zijn dat Islay-vaten; voor de Blended Oak Aged Embrasse zijn dat non peated whiskey-vaten. Door de vatrijping neemt het bier de rijke whiskey-tonen over, en wordt het bier zachter en ronder van smaak. Beide soorten doen het uitstekend bij blauwschimmelkazen en noten; maar ook prima bij wild-gerechten.

Peated Oak Aged Embrasse won in 2011 de Zythos Consumententrofée.
