The special beers in our range are our "pearls" in the assortment. Mostly aged in wooden barrels in our cellar, the heart of the brewery. Time does its work here and complex beers are created, that will charm to the most spoiled beer drinkers. Gastronomically, the beers can be combined well with culinary delights, as well as Burgundian dining!

*NEW* Orient-Ále is a hybrid between Saké and beer. An Ale with clear foodprints in the East. We used Koji spores, Darjeeling tea and a combination of Sake yeast and Beer yeast. The results, a complex, different beer with an elegant body, but dangerous, because of the hidden alcohol.

Original English barrel-aged IPA. Aged for 2,5 years on Puligny Montrachet barrels. A bit more fruity and oaky than the first version .

Our first 'fruitbeer'! Based on our barrel-aged beer "Bien-Sûr' , a gin-sour ale. Slightly sour, dark beer with a delicate gin flavour. By adding a large quantity of cranberries this beer got the 'boost'that it needed to become a super fresh, sour, fruitbeer. And that worked out well! 7% ABV
Nouveau Riche; Vieilles Fortunes : Aged for over 2,5 years on Brunello barrels. Clear taste and smell of red wine, vanilla and oak and light rosemary.
Very full body for a beer of only 6 % ABV

Innovative and surprising. After a visit to a Porthous in Porto the idea rose to use the same method to produce a 'Porto' out of beer. A specially brewed barleywine is , after a few days of fermentation, put to strength by adding grainalcohol. The fermentation is put to hold with lots of remaining sugars. The sweet 'reinforced' barleywine is the aged for multiple years on oak barrels and, in the proces 'portorized'. For now available in 3 year- , 4 year- and (December 2020) 5 year version.

Our first beer of the ‘Pure Oak Series’:
These are / will be beers matured on new Bulgarian oak barrels. This type of wood has characteristics of both American oak and French oak; beautiful vanilla keys paired with spicy oak keys. Through maturing these beers for six months in these casks, they get incredibly beautiful wood / vanilla flavors.
The practice will learn us which beers will eventually come in the ‘pure oak series’; We already know that above all blond beers come into their own with this kind of barrel aging.
Style: Classic heavy bittersweet ‘Imperial Stout’ with a touch of ‘Rooibos’, 11% vol. / serving at 11 â
A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast. These are / will be beers matured on new Bulgarian oak barrels.

A Special 'Belgian' White beer , brewed with extra buckwheat and Rosemary. After fermentation the beer gets a 4 month maturation on Brunello barrels. A different , complex and still refreshing Wheat beer.

Our IPA Belle Fleur is aged for almost 2 years on second use white Burgundy barrels. In the seconds half of maturation in the presence op Brettanomyces. Wild, complex and beautiful.

Een volmout gerstewijn van 13% vol, die één maal per jaar wordt gebrouwen; vergist met bier- en wijngist
Met L’Ensemble zoeken we de grens op. Niet alleen de grens van het maximaal haalbare, want 13% vol is extreem zwaar voor een volmoutbier. Ook de grens tussen bier en wijn vervaagt, om namelijk aan dit alcoholpercentage te komen, geschiedt een deel van de vergisting m.b.v. wijngist. Het brouwen en vergisten van dit unieke bier vergt veel tijd en aandacht. Lees verder in het technische fiche.
Stijl: Barley wine (winterbier)
A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast. With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between, beer and wine, because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention.
Aged for 1 year on Brunello barrels (red wine).
Style: Barrel-aged Barley wine (winter beer) / serving at 12 â
Embrasse matures four to six months in whiskey barrels. For the peated oak aged Embrasse Islay barrels are used; for the blended oak aged Embrasse non-peated whiskey barrels are used.
By barrel aging the beer it takes the rich tones of the whiskey and the beer gets a softer and fuller taste.
Both types do well with blue cheeses and nuts; but both beers are also excellent with venison. Peated Oak Aged Embrasse won the 2011 Zythos Consumer Trophy.
Style: Abbey / Stout / Porter Barrel-aged / serving at 10 â
Accessible spicy blonde beer of only 5.5 vol% matured in gin barrels.
This beer has matured for eight months on ‘Villiers’ genever barrels and 8 months in bottle. Noblesse VSOP is thus a clear beer, and has a very fine, light bitterness of hops and juniper. The beer is refreshing, smooth and has sufficiently long aftertaste. A perfect thirst-quenching beer.
Tasty with asparagus / dutch herring.
Style: Kölsch / Bitter / Blonde Barrel-Aged / serving at 7 â
Embrasse lagert 4 tot 6 maanden op whiskey-vaten. Voor de Peated Oak Aged Embrasse zijn dat Islay-vaten; voor de Blended Oak Aged Embrasse zijn dat non peated whiskey-vaten. Door de vatrijping neemt het bier de rijke whiskey-tonen over, en wordt het bier zachter en ronder van smaak. Beide soorten doen het uitstekend bij blauwschimmelkazen en noten; maar ook prima bij wild-gerechten.
Peated Oak Aged Embrasse won in 2011 de Zythos Consumententrofée.
